I'm working on a concept character that I came up with the other day (sort of like the human version of Beast from the X-Men) As a Might character with STR and DEX superstatted. I want to make this character usable for PvP and PvE... is this worth trying or am I wasting my time?

It's certainly worth trying. You're presumably going to gear for CON, EGO, and ignore PRE, INT.
You'll be able to combine Unstoppable with one of the MA forms, meaning you'll get energy every time you knock, and whenever you do what the MA form you choose requires.
I'd recommend starting in MA - whatever EB, Inexorable Tides (there's your cheap knock) and Thunderbolt Lunge (there's your cheap lunge and root).
Energy shield and dodge gear (available in the 20s) will be your most efficient defense, but you could go Parry and primary defense gear (20s) as well. Evasive Maneuvers will boost the deodge enough to make Bountiful Chi Resurgence valuable.

Unstoppable is probably due for a fix - it appears to be doing more flat damage reduction than intended. At that point, SS STR may or may not be ideal. A switch to Invulnerability would allow you more defense, but say bye to the huge damage boost and energy gains from Unstoppable.

Nope. You need Str/Con. If you go Str/Dex that either martial arts or blades. If your going to go with Str/Dex then almost all your gear needs to be Con as your best defenses and heals are going to be effected by Con.

You can always use invulerability or lightning reflexes for your defensive passive...

If building the might character for offense then ya, it is the best way to go if taking passives and forms scaling off it. Defensively you would suffer where the degree suffered varies highly on power selection. I can see it being between highly unplayable to a decently fun concept build.
I find the biggest limitation to knowing how to make good builds is always relying on a defensive passive no matter what. I hear people like this in zone chat all the time. It is a crutch that proliferates bad builds because it allows too much lenience and they never learn to build with synergy and outside the box thinking. I only refer to those who seem completely oblivious to the use of active defenses.
I haven't really tested out Might much as it is one of those sets that I have pretty much zero interest in. Playing as Might is about as exciting to me as watching paint dry so if I made a build with it you can bet it would be as extremely off the beaten path as possible :)

I have several toons that retcon and new alts rolled that I have SS str and dex and talented ego an con.
So far so good crits do fly all over the place and it sweet when it crits for ur main attack. Def seems to be still holding very well.
First impression is I recomend doing it especialy if ur good at the crafting thing.

If it's a Beast homage, then I assume you won't mind the occasional kick? If so, then DEX/STR + Focus + Dragon Kick (to proc Rush) is a very good approach. From there you could go with Lightning Reflexes + Bountiful Chi (w/ advantage) or Invulnerability for defense -- or Unstoppable for offense + energy return from any knock back powers you might take.
As Skeeter noted, Unstoppable's defense is currently bugged -- and the devs know about the bug, so don't expect it to last forever -- but as long as it is bugged, there's literally no reason not to take it on a melee character.
