How do I know which recipes will allow me to do custom crafting?
I look at the list, and its a bunch of stuff that tells me nothing about what the product will be. So I buy a few and it is all a waste, as the items are things I don't need.
On an alt, I got one of these "italics" recipes randomly while buying a few. And I was able to make great stuff with it.
Where do I get these custom crafting "italics" recipes?
I am science/mutation by the way. My skill is currently 299 (stuck there until I gain 1 more lvl).

You get them under your specialization, that would be mutation in your case. They are available in Tier 3 & 4, that is Skill 201-300 and 301-400. When checking out blueprints in those tiers, look for those with white text in the second part like this:

Does that mean I have to go to the mutations store, not the regular science vendor?

Some of the recipes are only available there. Others are available at the "regular" vendor. I think what he meant was that the tab you buy them from is labeled "mutations" - two others show up for "inventions" and "exposures", but of course they are useless to you as you need mutations.

Aha! That explains a lot. I was shopping in the EXPOSURES tab.

Ok, I found some exposure recipes that are custom.
All of a sudden tough, the trainer is not listing more recipes (my skill is 305). Do I have to go somewhere else to learn exposures that are over 300?

I just buy all the recipes. expensive but not prohibitively so. re: devs there are continuing revamps to the 'item preview' UI for market, crafting etc. in the works presumably you will be able to tell after those are complete.

All of a sudden tough, the trainer is not listing more recipes (my skill is 305). Do I have to go somewhere else to learn exposures that are over 300?
For 301+ upgrades you have to go to the specialist store. You will still have to buy the bags, conversions, consumables, power replaces and enhancements at a generalist store.

What is the specialist store for "exposures" specialty?
I don't see an Exposures Trainer on the map.

Alien Metabolism, Avatar and Exposure trainers are at the main crafting trainers for each skill in Ren C.

So just check all three? Because the one I have been using has nothing new for me in exposures, and hasn't for a while.

The specialist trainers are labelled with their specialization and not a unique name.

OK, so why doesn't the Avatar specialty shop offer new avatars for skill 301+? They have all sorts of customizable *upgrades* to avatars going up to skill 400, but no new "base models." Am I seriously supposed to keep using lvl-22 avatars to level 40?
Also, what are the materials from 301+ nodes good for besides bags?

The Avatar Trainer has plenty of 305+ blueprints.
Make sure you talk with the guy called Avatar Trainer and not one of the normally named people.

The specializations are the same with different names.
The three main Skills (Arms, Science & Mysticism) are different.

I still don't get Custom Crafting. When I go to the Specialization Trainer, buy the blueprints, and try to develop the item. I don't see anything that allows me to customize it. Like putting in enhancements or changing where the stat points are concentrated. Are only certain blueprint customizable? What should I be seeing when I go to develop a blueprint, that notifies me that its customizable?

Customizable items are italicized in your crafting list; also they have a bunch of options that pop up in the bottom of the window.

To explain it more:
There may be a slider that controls how "rare" the item is. When the slider is at the left, it's a common item and so the stats aren't good -- but it might take only one or two materials to make. When the slider is at the right, it's a rare item so the stats are better -- but it's going to take alot of resources.
There are pull downs listing the enhancements that you have purchased that are available on the selected item. These control exactly what you end up getting on the item. For example, maybe it will give a lot of Ego or a lot of Presence -- and so on. The mouse over on the enhancement will tell you roughly what it does (and the mouse over on the final item will tell you exactly what it does).
